Paparena is a wild herb harvested in winter and early spring, before transforming into the wonderful red poppy flower. It represents the highest expression of the ancient Salento peasant tradition. It is harvested, washed, blanched, then stewed and preserved in oil.
Excellent as an appetizer or side dish.
